New Recipe New Year

Hey there!  I guess this week between Christmas and New Years is the week for random blog posts from me!  Today is a New Recipe for the New Year!  It has suddenly gotten COLD here and so soup was a great idea.  I wasn’t even planning on posting today but I ended up making the best soup last night and I need to share the recipe (I am not sure I can really call it that) and a product that I love (I am not getting anything for telling you about this product), it is something that makes my life easier on a daily basis.

First of all, I got home from work and realized I had several (6-7) roma tomatoes that were going to go bad if I didn’t use them and I HATE to waste fresh produce.  So, of that a recipe was born!

Homemade Blender Tomato Soup

6-7 Roma Tomatoes, halved

4-5 medium carrots, ends trimmed

1/2 onion (I used 4-5 green onions because that is what I had on hand)

2 cloves garlic

4-5 small celery stalks

1/4 -1/2 C organic vegetable broth or bone broth

salt and pepper to taste

I put everything into my Vitamix blender and set it on Hot Soup, when the cycle was done my soup was perfect.  If you don’t have a Vitamix I think you could do this in any heavy duty blender.  I use organic carrots and I didn’t peel them just washed and trimmed.  Also, adjust the amount of broth by how thick or thin you like your soup.  The soup will be a little “frothy” at first, which is fine by me, if you don’t like it just let it sit awhile.  **due to my need for spice I also added a splash of Frank’s Red Hot.**


Sorry no pictures of the soup, it wasn’t too exciting to look at, I will say that the color is more VIBRANT than what you might be used to out of the can.  Also, if you are “resolving” to be healthier in 2016 this recipe will help you along!  Just think how many servings of veggies you are getting in this soup 🙂


This soup is healthy and simple and I couldn’t do it without my Vitamix!!  I use it every day to make Bulletproof coffee and several times a week to make my own dressings, smoothies, guacamole etc.  If you have considered a Vitamix and don’t have one yet I cannot recommend this kitchen tool enough.  We bought ours at Costco several months ago and as we were talking to the demonstrator in the store several random customers stopped to tell us to do it because they LOVED their Vitamix.  I am here to tell you BUY IT, if you have ever even thought about it, do it.  I know they are expensive but you guys, I really use mine at least once every day, sometimes more! This is the exact Vitamix we have but there are several models available.
